KOKORONO-SU Pure Rice Vinegar is crafted from organic Koshihikari rice and underground water from Mt. Fuji. Utilizing only seed malt, yeast, and seed vinegar, the brewing process starts with koji preparation, followed by roughly four months of sake and acetic acid fermentation. The vinegar is then allowed to mature for over eight months. We patiently let the acetic acid bacteria and lees settle, naturally evolving the flavor into a smoother taste. No shortcuts are taken in fermentation, and no food additives are used. We bottle this naturally-produced "supernatant" for your enjoyment.
