あばら骨周囲にある部位で口当たりがやわらかく、濃厚な脂を感じられます。赤身と脂身が層のようになっていることから「三枚肉」とも呼ばれます。肉のボリューム感がたっぷりあり野菜との相性も良いため、豚キムチなどの炒め物や豚汁もおすすめです。
