Hattori Brewery was established in 1927 and specializes in fermented foods for the Tokugawa family.

100% Hokkaido rice. Finished using traditional methods and painstakingly dried to produce this product. Dried koji can be used any time of the year without quality change, and can be used to make pickles, amazake (sweet sake), and shiokake (salt koji) at home at any time of the year.
