Founded in 1927, Hattori Brewery has a long-standing tradition of crafting fermented foods, originally for the Tokugawa family. Salted rice malt. Add 250cc of water to the salted rice malt, and after 7-10 days, you'll have 600g of a golden, umami-rich, all-purpose seasoning. The zip-up packaging allows for easy portioning and storage. Once prepared, the salt koji becomes a multifaceted seasoning that amplifies flavors, suitable for pickling, dipping, glazing, or various other culinary applications.
